Ingredients
- 3 cups Unsweetened Coconut Milk (or nut milk of choice)
- 12 ounce Plain Greek Yogurt (whole milk, full fat, or 10% or higher fat)
- ⅓ – ⅔ cup Monk Fruit Allulose Blend (to taste, granulated sweetener)
- 1 tsp Vanilla Extract
- 2 cups Fresh or frozen Blueberries
Instructions
- In a medium mixing bowl, use a hand mixer on low speed or whisk to combine the coconut milk and sugar until the sugar is dissolved.
- Stir in the vanilla.
- Gently stir in the blueberries; do not overmix. Cover and refrigerate for at least 1 hour, or overnight.
- Press Sorbet on the Ice Cream Machine, and then Start/Stop buttons.
- Remove the frozen yogurt mixture from the frig, then lightly stir mixture together again before pouring it into the pre-frozen ice cream maker bowl. Churn according to manufacturer guidelines, usually 20-25 minutes, until the frozen yogurt is the texture of soft serve.
- Serve immediately, or if a firmer consistency is desired, transfer the frozen yogurt into an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.
Chef’s Notes
1. Thawed frozen blueberries may be substituted if fresh blueberries are not available.
2. Powdered Monk Fruit Allulose Blend sweetener works best when making homemade frozen yogurt. This helps to control the icing of your frozen yogurt when frozen.
