Ingredients
- 1 tbsp Salted Butter
- 1 Onion (medium)
- 2 Garlic Cloves (crushed)
- 2 cups Zucchini (large, grated)
- 1 cup Carrots (grated)
- ½ cup Cheddar Cheese (shredded)
- ½ cup Feta Cheese (crumbled)
- 1 cup Almond Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Sea Salt
- ½ teaspoon Black Pepper (ground)
- 5 Eggs (large)
- ¼ cup Heavy Whipping Cream
Instructions
- Pre-heat your oven to 355F/180C.
- Place the butter, onion, and garlic in a small saucepan and saute over medium heat, until the onion is translucent.
- Grate the zucchini and the carrots coursely. Place into a clean towel or muslin cloth and squeeze out as much liquid as you can.
- In a large bowl add the zucchini, carrots, onion mixture, cheddar cheese, half the feta cheese, almond flour, baking powder, salt, and pepper. Mix well.
- Add the eggs and cream and mix well.
- Prepare a 9 x 13 inch baking dish by lining it with parchment paper.
- Pour the zucchini casserole mixture into the baking dish and smooth out.
- Sprinkle over the remaining feta cheese.
- Bake in the oven for 25-35 minutes, until golden brown and an inserted skewer, comes out clean.
- Remove from the oven and allow to cool for 15 minutes before slicing into portions and enjoying.
Chef’s Notes
The original recipe contained spinach instead of carrots. Choose whichever vegetable you’d prefer for your casserole.
