Ingredients
- 24 Chicken Wing Portions (52 ounces, a mix of drumettes and wingettes thawed are ideal)
- 12 tblsp Red Hot Sauce
- 4 tblsp White Vinegar (distilled)
- 1 teaspoon Sea Salt
- 2 teaspoon Oregano
- 1 teaspoon Rosemary
- 2 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
Blue Cheese Dip:
- ½ cup Blue Cheese (crumbled)
- ⅔ cup Greek Yogurt (2%)
- 1 tblsp Lemon Juice (fresh)
- 1 tblsp White Vinegar (distilled)
Accompanying Vege Sticks:
- 4 Celery Stalks (halved crosswise and cut into 16 sticks total)
- 4 Carrots (peeled, halved crosswise and cut into 16 sticks total)
Instructions
- In a large bowl, combine the chicken with six (6) tablespoons of the hot sauce, the vinegar, oregano, rosemary, garlic powder, onion powder, and salt, tossing to coat well.
- Place the bowl of prepared chicken into the refrigerator for up to an hour to marinate.
- Mix the blue cheese dip: In a small bowl, mash the blue cheese and yogurt together with a fork. Stir in the lemon juice and vinegar until well blended. Refrigerate until ready to serve.
- Prepare the vege sticks, then refrigerate to serve with the prepared chicken later.
- Preheat the air fryer to 400F/204C for 5 minutes
- Working in batches, arrange a single layer of the chicken onto at least two racks in the air fryer oven. Cook for 15-16 minutes, flipping them halfway though the cooking cycle, until crispy, browned, and cooked through.
- Transfer the air fryed chicken to a baking dish to keep in a warm oven while air frying the remaining chicken. OR, when all the batches are done, return all the chicken to the air fryer oven and cook for 1 minute to heat through just before serving.
- Finally, return the chicken to a clean bowl and toss with the remaining six (6) tablespoons of the hot sauce to coat. (do not use the bowl the marinade was in.)
- Arrange everything (chicken, blue cheese dip, and vege sticks) on a platter and serve to your hungry bunch!
Chef’s Notes
To prepare the wings ahead of time, you can marinate the chicken and make the dip the night before. Just refrigerate until ready to prepare your meal.
Adjust your cooking time if needed depending on the thickness and size of your wing portions.
When using the air fryer oven, use the middle rack and select the “Air Fry” function. Air Fryers can vary greatly. Please take the time to learn your specific air fryer. You may need to adjust the times and temperatures based upon your air fryer manufacturer’s recommendation.
