Delicious Keto Crustless Quiche, with Feta & Bella Mushrooms

Ingredients
- 2 cups fresh spinach or kale chopped
- 1 medium Onion chopped
- 1 cup of Bella Mushrooms sauteed
- 1 Tblsp Organic Olive Oil
- 4 eggs
- 1 cup Heavy Whipping Cream
- ½ teaspoon salt or to taste
- ½ teaspoon black pepper
- ½ cup Mozzarella Cheese, shredded/grated
- ¼ cup Parmesan Cheese
- ⅔ cup Feta Cheese
- 1 tsp Onion Powder
- ½ tsp Garlic Powder
Instructions
- Spray the baking dish with cooking spray, then set aside.
- Pre-heat oven to 355 degrees.
- Sautee the spinach or kale & onions with the olive oil for 3-5 minutes in a skillet or sauce pan, then drain or squeeze excess liquid from the mixture before adding/scattering it as the first layer into the prepared baking dish.
- Break the feta cheese into chunks and scatter them on top of the spinach layer in the baking dish.
- Sautee the bella mushrooms in butter or olive oil for 2-3 minutes, then drain and add them as the next layer of the quiche.
- Whisk the eggs with the heaving whipping cream in a large mixing bowl.
- Whisk in the seasonings, parmesan cheese, and half of the grated mozzarella cheese into the egg mixture.
- Pour the egg mixture into the baking dish and final layer.
- Scatter the remaining mozzarella cheese on top.
- Put into the oven on center rack and bake for 45 minutes until cooked through and nicely browned on top.
- Remove quiche from the oven and allow to cool down before slicing.

Chef’s Notes
• Check on your quiche towards the end to make sure it’s not browning too much on top.
• Cooking times may differ depending on the size pan you use. Note you could use a cast iron skillet as well.
• You can vary the flavor by the meats, cheese, vegetables and spices you use.
• You can freeze this for a quick keto breakfast or on the go. Just store individual pieces in an air tight container and microwave to reheat.
