Ingredients
- ½ cup Unsalted Butter melted
- ½ cup Swerve, Confectioners (or Erythritol sweetener of choice)
- ⅓ cup Unsweetened Cocoa Powder
- 2 Eggs large (room temperature)
- 1 tsp Vanilla Extract
- ½ cup Almond Flour
- 1 tbsp Coconut Flour
- ½ tsp Baking Powder
- ¼ tsp Sea Salt
- ½ cup Black Walnuts (optional)
- ½ cup Dark Chocolate, Chips (optional)
- Cooking Oil Spray
Instructions
- Preheat oven to 350 degrees. Lightly spray each compartment of the brownie bar pan with cooking spray and set aside.
- In a large mixing bowl, cream the butter and sweetener together until light and fluffy.
- Add eggs, one at a time, and mix well to combine. Then add the vanilla flavor and mix it in well.
- In a separate bowl, stir together the cocoa powder, almond flour, coconut flour, baking powder, and salt until well combined . Be sure to break up any lumps of almond flour or coconut flour.
- Add the dry ingredients to the wet ingredients, and mix to combine.
- Optionally, add up to ½ cup of mix-ins, like chopped nuts or chocolate chips.
- Allow the batter to sit for 5 minutes so coconut flour can absorb moisture.
- Finally, spoon batter into the prepared brownie bar pan, filling each compartment up to 2/3 way full.
- Bake in middle rack of the oven for 20-25 minutes or until toothpick inserted into center of the bars comes out clean. To avoid excessive browning of your brownies, loosely place aluminum foil over the pan during the last 10 minutes or so of the baking time.
- Allow bars to cool completely in the pan before removing the bars from the pan. Gently turn bars out, grabbing them and placing them on the cooling rack to completely cool before storing. Can serve warm or at room temperature when you’re ready to enjoy them.
- Brownies will freeze well for up to 3 months.
Chef’s Notes
1. As keto breads are not as condensed as breads made with an all purpose flour, allow the brownies to cool completely to avoid the “crumbling effect” upon removal of the loaf/loaves from the pan.
