  • Preheat the oven to 350 F
  • In a bowl, mix together the flan ingredients.
  • Butter or grease the entire inside of the baking pan. Can use PAM if you'd prefer.
  • Next, make the carmel sauce.
  • In a small saucepan, add 1/2 cup of Monk Fruit Allulose Blend Sugar with the water, on low heat.
  • When the sauce begins to simmer, raise heat to medium high and stir frequently.
  • While stirring, allow the liquid to turn into an amber color.
  • Remove from heat and allow to cool just slightly, then pour into the prepared pan.
  • Next, pour in the flan mixture.
  • Boil some water in another sauce pan or a water pot to use for the water bath.
  • Finally, create a "water bath" by placing the pan into a larger dish or pan, and pour 1-inch of boiling water into the dish/pan.
  • Transfer it all to the oven and Bake for 45-50 minutes. Make sure the flan is done by checking it with a tooth pick to ensure it comes out clean.
  • Remove pan from oven and the water bath, then allow the flan to cool on top of the stove for a while.
  • Cover the flan (still in the pan) and Refrigerate overnight.
  • Next day, first run a spatula around the top edges of the flan in the pan to ensure that none of it sticks. Finally place a plate over the pan and flip the flan onto the plate.
  • Enjoy!

Chef’s Notes

For the caramel sauce, I used the Monk Fruit Allulose Blend Sugar.  Allulose will caramelize, thicken, get sticky, and will not crystalize as quickly when cold like many other sugar substitutes.  I have tried other sweetners, however they didn’t work as well.
Optional:  For additional sweetness, you can add Stevia Liquid, Drops.
